Playing catch up

Wow.. sorry about the wait in between posts.  This has been a nutso week though.  Firstly, my hard drive on the Smilodon died ( my monster computer).  Talk about total freak out.  My second job is as an artist and like all my stuff was on that computer.  I think I had a solid 12 hours of total panic attack, freak out time.  It’s all good now though, my dad is amazing.  He rescued the majority of files off of it before it completely went kaput. He also loaded an SSD with a piggyback terabyte hard drive to it.  That’s nerd speak for ‘my computer is now insanely fast and has more storage space then I’ll ever use.. squee!’

On the keto front, been rough.  I don’t handle stress well in the sense that I stay calm usually (except for the computer thing)  but I devour carbs like it’s my job o_o so… back on the wagon for Megu~  Especially after having to pull and extra 12 hour shift yesterday.

Let’s see, for dinner tonight I made Ranch Cheesy Chicken.  So tasty!  Why have I never smeared mayo on things before?!?

Ranch Cheesy Chicken

4 chicken breasts or 6 chicken thighs

1/2 cup of mayo (real mayo, not miracle whip)

2 Tbsp Dry ranch seasoning

1/4 ish cup of shredded cheddar cheese – in my case I used Kraft’s White Cheddar Chipotle

Crushed Pork rinds for topping

Preheat your oven to 425 degrees Fahrenheit.  In a greased baking dish, lay your chicken out.  In a bowl, combine mayo, ranch seasoning and shredded cheese.  Spread over chicken and top with crumbled pork rinds.  Bake for 24 minutes or until your chicken is cooked all the way though.


This was to die for, so juicy and flavorful!!  I also gave some keto coffee cake a try, from an oopsie recipe.  OMG.  It’s got the taste and texture of baked french toast.  I think I have a new go to for sweet breakfast ❤


Feeling good and crappy at the same time

Another day down and another day of C25k successfully conquered.  It’s surprisingly a lot easier than when I tried to do it a few years ago… so that’s a bonus.  I came up with a couple mantras, mid run yesterday that I should strive to live by the coming year.  

1.  My body is a temple and through it I honor the divine.  – some of you don’t know, not that it really matters but I’m a wiccan.  I am a part of nature, as is the god and goddess so taking care of myself is one of the best ways to honor them.  

2.  Train like you just got recruited to the Avengers!!  o_o yes! *flex*  run till you can’t anymore!! Lift till your arms or legs feel like they’ll fall off!!  RAWR!  Lol, I say this now but I know tomorrow I’ll be really sore and regret it. 

On another note, this weather.. seriously.  I love that it’s starting to warm up but my sinuses just can’t take the change!  I have a killer headache, to top it off, I fell down the stairs to my basement earlier and spilled a big bag of dogfood all over the floor.  So, my beloved, jerk beagles are howling and trying to claw their way downstairs to get the few pieces that are left, wedged between the railings.  I don’t know what’ll happen first…. my head exploding or the dogs dying -_-

Today also marks a small victory for myself.  I made it through the entire day without eating sugar.  Really… I’m not lying.  There was about an hour period around 2:00 where I literally paced around my lab at work trying to talk myself out of a peanut butter cup or one of those coconut cream filled egg thingies.  It was horribly painful.  I’ve always heard people on the keto subforums say “oh don’t worry.. the cravings for sugar will go away eventually and stuff will just taste way too sweet for you.  You won’t want sugar anymore!” …. bullshit.  In the couple years I’ve toyed with keto, never in that entire time was sugar not on the back of my mind.  Desserts have never tasted too sweet or too rich.  Sure they make me sick, but when I’m eating it, I don’t care.  It’s worth the nausea and inevitable vomiting.  I guess when you’re an addict, you are for life.  I’m not upset by this, it’s just something I need to deal with for the next 100 some odd years of my life.  Oh, btw.. I’m determined to live to be at least 200 years old and super healthy and I’ll have bacon to thank for that :3

Oh!  And I finally took the time to work out the keto caculator found on  *points*  It helps you figure out the ratio of macros you need for your body type for optimum effects.  It really threw me for a loop and I’m still not 100% sure about it.  It says I need to be eating 1812 calories a day… really!?!  I mean, I know I’m a hobbit at all, and we’re known for being small and bottomless pits but still.  that’s a lot of food O_o  we’ll see… I’ll give it a try but I’m skeptical.

For dinner tonight, I present  Spaghetti Squash Pancakes, brought to you by Caveman Keto.  Make them.. they’re delicious.  I added some spices to my sour cream topping because I like things with a kick ;D

Clinging to the edge of the wagon

Today was a rough day.. really rough.  On a good note, I was having a fantastic hair day.  But, I had a patient whose father was convinced that I was deliberately hurting their child.  Ya know the type.. rich parents who only have one kid that they will forever spoil and gods forbid the kid is made to do something they don’t want to do… this must mean that someone is killing them!!  le sigh…. so, I cheated.  I’m starting to think I suck at this.  I had some popcorn shrimp and a few pieces of chocolate.  I feel really guilty about it.  I’m going to try and make it up by going to the gym in a little bit though.

I started couch to 5k this week.  Running is something that I used to despise but have slowly started to enjoy.  Especially when I’ve got some daft punk blaring in my ear :3

For dinner.. I’m not sure.  I have two options.  1. I have some steak marinating.  They were on sale at my local grocery store so why not stock up!  or 2.  Caveman keto posted a recipe for spaghetti squash pancakes topped with sour cream.  Maybe I’ll just do steak because the junk I ate earlier put me way over my carb limit.

Impending shark week with a side of mayo

So, let’s kick this off with some TMI!  I have recently been placed on a new birth control that has increased levels of estrogen.  The docs wanna see if after nearly 10 years of not having a period if all my lady bits still work.  So… this weekend shall be the beginning of the end… shark week.  If any of you are frequenters of reddit/r/xxketo, then you’ve heard the tales of horror that is your menses on a low carb lifestyle. I already feel horribly bloated.  I’ve been chugging water like a fiend to try and keep the puff at bay, besides water intake being incredibly important when you’re on a low carb diet anyway.  This terrifies me, I felt like I barely fit in my scrubs today x_x

While I’ll admit that I cheated a little and had a bit of chocolate… I regret nothing!!  I did curb some of my emotions with a delicious keto friendly chicken tender recipe.  This can also be applied to any cut of poultry, I personally am a huge fan of thighs, but the little tenderloin thingies were on sale and I’m trying to keep to a budget.  Here’s the recipe:

Mayo and Parmesan crusted chicken:

  • chicken, any cut you wish
  • mayo (not miracle whip! as delicious as it is, you want to keep your sugar intake down)
  • grated Parmesan cheese
  • Italian herb blend

Pre-heat your oven to 425 degrees F

Coat your chicken in a thin layer of mayo.  If it’s too thick, it won’t crisp up as nicely as you’d like.  It’ll still taste good though *shrug*  up to you.  Then, as messy as it is, dredge the mayo-y goodness into a mixture of parm and herbs.  No need to add salt, the cheese makes it salty enough.  Feel free to add as many herbs or other spices though.

Place chicken on a greased baking sheet and back for approximately 20 minutes.  This can also vary depending on how much chicken you are baking and how dark you want the top.  Be careful not to dry out your tenders though!  No one likes nasty, dry chickens-es precious >_>

Enjoy with your favorite, low carb dipping sauce.  I personally love a good spicy mayo or yogurt.
